Phirni is a North Indian sweet dih made with rice and milk. It is similar to rice pudding. The rice is soaked and then coarsely ground for the dish. Some phirni recipes also use rice flour. I made this recipe with mango puree but you could also use chocolate, saffron or any other flavours of your choice.

- Wash and soak rice in 4 cups water for about 3 hours.
- Drain the soaked rice and coarsely grind it in a food processor. Keep aside.
- In a heavy bottom pan, add rice along with 4 cups whole milk and bring it to a boil. Then lower the flame and cover it, gently stirring the contents in between until the rice is fully cooked.
- Now add sugar, ground cardamom and let the phirni thicken to desired consistency.
- Switch off the flame and add the mango puree and mix well. Let the phirni cool and then refrigerate.
- Serve cool phirni in terracotta or glass bowls, garnishing with mango slices or crushed mix nuts like pistachios, cashews and almonds.
