Leftover Rice Pakoras (Fritters) is the perfect recipe if you ever wonder what to do with leftover rice. The best thing about this recipe is that it can be customized according to your taste buds and palate. - Mash well leftover rice with a spoon or potato masher.
- Add yogurt, chopped onions, veggies, green chillies, ginger, coriander and all the spices. Mix well and check seasonings. Cover and keep aside for about 10 minutes.
- After 10 minutes, add 1/2 cup besan (chickpea flour) and about 3 tbsp. oil to the rice mis and mix well.
- Preheat AirFryer to 400 degree F.
- Make round (or desired) shape of pakoras from the mix.
- After preheating, layer the pakoras in the AirFryer and cook about 15 minutes, turning once in between.
- Serve rice pakoras with some masala chai (Indian spiced tea) or drink of choice.
- Alternatively you can deep fry the pakoras in hot oil in a wok.
