“Kopra Pak” is a kind of sweet. They are made with coconut and milk. It is very popular in South India where it is made with fresh coconut. But the recipe can easily be made with desiccated coconut also. It is especially made during Diwali and other festivals.

- Pulse the coconut in a food processor if the strands are too big.
- Grease a square or round tray with some melted ghee and keep aside.
- Warm milk and mix the saffron strands in this. Keep aside.
- Put the desiccated coconut in a large non stick pan and dry roast for a few minutes on medium flame, stirring constantly. Do not let the coconut brown.
- Now add the sugar and the evaporated milk and mix well for about 5 minutes on low flame, until everything is well mixed, stirring constantly. (You can also use sweet condensed milk, in which case do not add sugar).
- Now add in the saffron soaked in milk and cook for a couple of minutes. Keep stirring constantly.
- Now pour out the mixture onto the greased pan and flatten it with the back of a spoon. Cool for a few minutes on the counter and then completely in the refrigerator about 2 hours.
- Once cooled and set completely, cut out the coconut fudge into diamond or square shapes with the help of a buttered knife. Store well in an air tight container. Store in refrigerator.
