Jowar Bhakri

Jowar Bhakri is a kind of Indian bread made from jowar (white millet). It is also called Jolada Rotti.

Bhakri is a kind of flat bread popular in the western states of India (Gujarat, Maharashtra, Rajasthan and Karnataka). Bhakri is a thicker version of roti and is knead with little water and rolled out thicker. These flat breads have a crispy exterior and a soft texture inside.

Flour:

Different regions in India have their unique ways to make this healthy and fibrous bread. Bhakris can be made with coarsely ground wheat flour (Bhakri flour), with rice flour, with Bajra or millet flour, and also with Jowar flour or Sorghum (also known as new Quinoa).  Bajra and Jowar  are gluten free grains and therefore very healthy. Bhakris made with sorghum flour are known as Jowar Bhakri.

Kinds of Bhakri:

There are different types of bhakri, according to the flour used. It can be plain, savoury or sweet, made according to taste and palate. Plain Bhakris are made using just flour, salt, oil and water. Sometimes jaggery or sugar is mixed into the bhakri flour to make sweet bhakri. Or it can also be made savoury by using a blend of spices to the flour.   • Take jowar flour, wheat flour, salt and oil in a large vessel and knead it into a smooth dough adding about 3/4 cup of water (more or less as needed). Cover the dough and keep aside for about 10 minutes.
  • Divide the dough into 8 portions. Roll each portion with your hands to make round shape. Adjust the edges using your fingers.
  • For making bhakri, take one small round and dusting a little wheat/jowar flour, roll it out with a rolling pin into a smooth bhakri. Do not worry if the edges are not smooth.
  • Heat a griddle (tawa) or pan on medium high. Place the rolled out bhakri on the hot tawa/pan and cook about 40 seconds and then turn it with a spatula and cook the other side, pressing along the edges. Then take it out of the pan and place it directly onto the gas and cook for about 20 seconds on again each side. (Skip this step if you do not have a gas range). Remove cooked bhakris on a plate and brush melted ghee on top.
