Green Beans & Shrimp Stir Fry

We lived in Edmonton, Alberta a few years ago. Over there we would frequently visit a local family owned Thai restaurant. There, one of our favourite dishes was the shrimp & green beans stir-fry. It’s really a simple dish to make. Fresh green beans, shrimp, ginger-garlic, some soy sauce, red chilli sauce, white vinegar, and a hint of Thai chilli sauce and sesame seeds. When all these ingredients come together, it just tastes so good! Adjust the seasonings according to your taste buds. Try it on its own like a starter or with some jasmine rice.

  • Clean shrimp, wash and drain off water completely.
  • Clean green beans. Remove ends. If too long, cut the beans into half each.
  • Heat 2 tbsp.oil in a wok. Add in finely chopped ginger, garlic.Toss around for 30 seconds and then add in the green beans.
  • Saute the green beans for 2 to 3 minutes. Then add in soy sauce, red chilli sauce, vinegar. Let the beans cook for 3 to 4 minutes.
  • Check seasonings, add a little salt and black pepper to taste is necessary.
  • Now add in the cooked shrimp and toss in the sauce for a few minutes.
  • Add in the sweet chilli sauce and and garnish with some toasted sesame seeds before serving.
  • Serve it on its own or with some jasmine rice.

Notes

Adjust seasonings according to your taste. I do not add salt and pepper to this dish as the soy sauce in itself is quite salty. Use more or less of the seasonings according to your taste.
