Cucumber Raita is the most common Indian side dish or dip. It is served with spicy rice dishes like pulao and biryani. The cooling and mild flavours of cucumbers, mild herbs and yogurt are combined together to make this wonderful side and it can be made in under 5 minutes. Chilled in the refrigerator, it can be relished for a couple of days.

- Wash & chop the cucumber into fine tiny cubes. Chop cilantro & mint. If using green chilli, remove the seeds and chop finely.
- Beat yogurt in a bowl & add salt to taste. Add in the chopped cucumber, green chilli, cilantro & mint leaves.
- Mix well & sprinkle cumin powder, red chilli pd. and chaat masala (if desired) on top. Can be served chilled.
