Chia (Salvia Hispanica) is a member of the mint family. This plant has been in existence from 3500 BC. The Aztec and Mayan people were the first to cultivate this plant. In Manyan language, chia means strength. This tiny, potent seeds has many health benefits. They contain essential omega 3 acids, is an excellent source of fibre, reduces inflammation, aids in weight loss, and is very nutritious. They are rich in antioxidants.
It is beneficial to soak chia seeds in some liquid before consumption. About 2 to 3 tbsp. per day is sufficient for a person per day. You can add it to your meals or breakfast.
Here is my favourite recipe for a chia pudding. The chia seeds are soaked overnight in almond milk. Soaking chia gives it a gel like consistency. You can also use regular milk or coconut milk. The soaked chia is then topped with an apple compote made with maple sugar, vanilla and powdered cinnamon.

Chia:
- Soak chia seeds in almond milk, mix well and leave in the refrigerator overnight. Apple Compote:
- Peel, core and cut apples into small cubes. Mix in cinnamon pd. and keep aside.
- In a small pan, melt ghee and then add in the apples. Add salt, maple syrup, vanilla essence and mix well.
- Cover the pan and simmer about 5 minutes.
- Now remove lid and cook until the liquids evaporate and the apples are browned. Switch off flame. Assemble Pudding:
- In a serving glass or mini jar, scoop in a little apple compote. Now add in the soaked chia and then top it with some more of the compote. Garnish with cinnamon sticks. This recipe makes 3 servings.
