‘Thoran’ is a dry curry dish from Kerala. It is an easy dish to make and the main ingredients for a thoran are coconut, cumin and green chillies. Cheera is a type of red spinach, also called amaranth.Growing up, cheera thoran was a weekly fare at home. In Kerala, there is a special kind of spinach leaves. These are red unlike the common green spinach. For making this dish, if the red spinach is not available. you can use the green spinach.

- Wash and finely chop spinach leaves and green chillies. Finely chop onion.
- With a mortar and pestle. or in a small grinder, grind coconut, garlic and cumin seeds into a fine paste, using very little water, if needed.
- Mix this paste into the chopped spinach, green chillies, adding a little salt and turmeric.
- Now heat oil in a pan. When oil is hot, add red chillies and mustard seeds. When seeds start spluttering, add finely chopped onions. Saute for a couple of minutes, then add the prepared spinach-coconut mix. Close the lid and cook for about 5 minutes on medium high. After 5 minutes, remove lid and give it a proper mix and keep stirring until all the water evaporates.
