Aloo Gobi is a quintessential Indian vegetarian dish. Aloo stands for potatoes and gobi means cauliflower. This dish goes very well with Indian breads such as roti, parathas or naan. There are many methods of cooking this dish. Here I have used the air fryer to first fry the cauliflower florets and the potatoes and then made the dry curry.

- Clean and cut cauliflower into medium size florets. Peel and cut potatoes into medium cubes. Peel and chop onion finely. Slice green chilli and ginger into thin juliennes. Wash and chop tomatoes finely.
- Preheat air fryer to 350 degrees. Layer the cauliflower florets into the basket and cook about 10 minutes until they become brown on the edges. Take them out and keep aside on a plate.
- Now layer the potato cubes into the air fryer basket and brush a little oil if necessary. Cook for about 10 to 15 minutes until potatoes turn crisp and golden around the edges.
- Heat about 2 to 3 tbsp.oil in a pan/wok. Add cumin seeds and when they splutter, add in the chopped onion.Saute for about 5 minutes.
- Now add the ginger and green chillies. Mix well, then add in the spices - turmeric, chilli pd., coriander pd., cumin pd. and salt to taste. Now add in the tomatoes and a little water if necessary. Mix well and cover the pan/wok for 2 minutes.
- Now add in the fried potato cubes and cauliflower florets. Gently mix until the spices coat the vegetables. Add in a little water if necessary and cover and cook on medium for 3 to 4 minutes.
- Garnish with fresh coriander or cilantro leaves and serve with warm roti, naan or parathas.
