Boondi Raita is a side dish made with boondi and yogurt. Boondi, also known as Buniya, Bundi or Bonde is a snack made with fried chickpea flour. These are tiny round or pearl shaped fried fritters. A batter made of chickpea (gramflour) is passed through a ladle into hot oil and fried until golden brown. These boondis are tiny pearl sized balls. Both salted and unsalted packaged boondi are easily available to buy from Indian grocery stores. Salted Boondis are often found in chaat or bhel recipes. Unsalted boondis are mixed with sugary syrup and are popularly known as laddu pr ladoo.
Boondi Raita is made with boondi, yogurt, roasted crushed cumin, chilli powder, chaat masala, black salt (Himalayan salt) and a garnish or mint and coriander leaves. - Take two cups of yogurt in a glass bowl and mix well. Add sugar, salt, chilli, cumin and chaat masala.
- Soak boondi in some warm water for a minute and drain the water completely. Add boondi to the prepared yogurt and mix well. Keep it in the refrigerator to cool for about an hour.
- Before serving, garnish with finely chopped fresh mint and coriander.
