This is a Kerala cuisine. Jackfruits are these delicious fruits grown in tropical regions. This curry is made from the seeds of jackfruits.

- Soak jackfruit seeds in hot water for about half an hour. Drain, clean with paper towels and remove outer shell of the seeds carefully with a sharp knife. (Discard the outer white and brown shells, and you will see the fleshy soft part inside).

- Chop seeds and cook it in salted water, adding a little turmeric for about 20 minutes, until they are 3/4 cooked. You can pressure cook it for 3 whistles too.
- Grind coconut along with green chillies, cumin and shallots into a fine paste.
- Heat coconut oil in a pan and add mustard seeds. Add in 2 whole red chillies and curry leaves.
- When the mustard splutters, add in the cooked jackfruit seeds along with the ground coconut paste, coconut milk and mix well.
- Add in about a cup of water and salt to taste. Let the curry come to a rapid boil, then simmer on low heat for 10 minutes.
- Now add the chopped green mangoes and mix well. Simmer for another 10 to12 minutes until the mangoes are well blended in the curry. Turn off heat and serve. Tastes delicious with cooked rice.
