Kale Walnut Pesto Pasta With Feta

Pesto is a paste which is made with leafy greens along with some nuts, garlic and spices. It originated in Northern Italy and is now popularly used in many European cuisine. Here Kale leaves and walnuts add a nutty flavour to the pesto.

Ingredients
  • 2 cups dry pasta (any kind)
  • 1 bunch kale leaves
  • 1/4 cup walnuts
  • 4 cloves garlic
  • 1 cup crumbled feta
  • 1/4 cup olive oil
  • 2 tbsp. lemon juice
  • a little salt and pepper to taste
Instructions
  1. Boil pasta according to directions. Drain and keep aside.
  2. Meanwhile, wash and chop kale leaves. Blanch it in hot water, drain and keep immersed in ice water to retain green colour.
  3. Drain and pat dry the kale leaves. Put it in a food processor with garlic, and dry roasted walnuts.
  4. Pulse until you get smooth texture, then add feta, oil, salt and pepper.
  5. Pu the pasta in a serving bowl, pour the pesto paste into the bowl and toss well. Drizzle some lemon juice over the pesto pasta and check seasonings. Enjoy pesto pasta warm or at room temperature.
