Cinnamon Rolls
Making delicious cinnamon rolls at home is easy with the help of a stand mixer with paddle & dough attachments - even without a bread machine. Only thing required is a little time & patience for the dough to rise :) If you plan ahead, you can even make the rolls and keep them refrigerated until you are ready to bake & serve.

Ingredients
For the Dough:

cup melted butter

cup milk

cup brown sugar

tbsp. vanilla extract

cups all purpose flour

(about 8 gms.)

For the Filling:

cup melted butter
-

tbsp. ground cinnamon

cup brown sugar
For Icing/Glaze
-
1
cup castor sugar
(powdered sugar)

1/4
cup cream
(or half & half)

tbsp. vanilla extract
Instructions

Warm the milk, add sugar & yeast and mix well. Now add in the melted butter and vanilla extract & stir well.

Take 2 & 1/2 cups of flour in a stand mixer bowl & add in the above mix. With the paddle attachment on, mix the contents well until you get a smooth consistency. Now add in eggs, one at a time, until blended.

Remove the paddle attachment & put the dough hook on the stand mixer. Now add in the remaining 2 & 1/2 cups flour to the bowl and knead everything together until it resembles a soft dough. If needed, you can add in a little more flour (about 2 tbsp,) to the mix. Knead for a good 5 to 6 minutes.

Take out the kneaded dough into a bowl, brush with some melted butter all over, cover & leave it to rest for about 2 hours, until the dough rises.

When the dough has risen, take it out & give it a pat all over (knocking it down) and leave it to rest for another 10 minutes.

Meanwhile, whisk together melted butter, brown sugar & ground cinnamon in a glass bowl.

Now, place the dough on a clean surface, and dusting a little flour all over, roll the dough into a big rectangle about 18 by 12 inches. Leaving a little edge ( about 1 inch) on top, brush the cinnamon filling generously all over the rectangle. Now starting at one long end, roll the entire thing into a long cigar shaped roll, brushing the top parts with some melted butter. Butter the sides of the roll all over as well.
Now with a sharp knife, cut the log into round slices (about 12 to 16 slices or about 2" each)

Place the slices on a baking tray and leave it to rest for a while uncovered. (At this stage, you may even take the rolls & freeze it for baking later).

Preheat your oven to 350 F. Now bake the cinnamon roll for about 30 to 35 minutes.

While the rolls are baking, make the icing by stirring together all the glaze ingredients.

Once baked, drizzle the glaze over the rolls & serve.
