Baked Parmesan Zucchini

Parmesan and Zucchini are a wonderful pairing. This is one of the best side dishes we make on a regular basis. It goes well with any kind of food. Ingredients
  • 4 zucchini
  • 1/2 cup parmesan
  • 2 tbsp. Italian seasoning
  • 1/4 tsp. garlic powder
  • a little salt and pepper to taste (salt is optional)
  • 2 tbsp. olive oil
  • 1 tsp. red pepper flakes
Instructions
  1. Preheat oven to 350 degrees F. Place a cooling rack on the baking sheet.
  2. Slice each zucchini into quarters lengthwise and keep aside.
  3. In a small bowl, mix all the spices and set aside.
  4. Place zucchini on the baking sheet. Then brush a little olive oil onto all the slices.Now drizzle the parmesan mix on top of the zucchini slices.
  5. Place the tray in the oven for about 10 to 15 minutes. Then broil for about 2 to 3 minutes until golden brown on top.
Recipe Notes

For zucchini roundels, cut zucchini into 2 inch rounds and baste them with oil and mix it in the parmesan mix. Place the roundels on a tray and bake it in the oven for about 10 minutes.
