Watermelon Salad (A Cool Summer Greek Salad Recipe )

This watermelon salad is the perfect way to cool down in summer. Watermelon cubes, cucumber, cherry tomatoes and thinly sliced crispy red onions are the main ingredients for this recipe. Lime juice, extra virgin olive oil and feta cheese gives it a sweet and savoury touch. It is a refreshing salad and it only takes minutes to throw it together.

Ingredients
  • 1 Seedless Watermelon
  • 1 English Cucumber
  • ! Small Red Onion
  • 1 Cup Cherry Tomatoes
  • 1 Cup Feta Cheese (crumbled)
  • 2 tbsp. fresh mint leaves
  • Dressing
  • 3 tbsp. lime
  • 2 tbsp. Extra Virgin Olive Oil
  • a little Salt and Pepper (to taste)
Instructions
  1. Cut a seedless watermelon into half lengthwise and scoop out big chunks of the fruit with a spoon. Cut the fruit into cubes. Reserve the cored watermelon half to use as a serving platter if desired.
  2. Thinly slice a small red onion and soak it in a bowl of chilled water for 15 minutes. Drain and pat dry.
  3. Peel and dice cucumber into cubes and cut the cherry tomatoes into halves.
  4. Place watermelon cubes, cucumber, cherry tomatoes and red onion in a large bowl.
  5. Add feta and fresh mint. Toss gently.
  6. In a small bowl, whisk together the extra virgin olive oil, lime juice, salt and pepper.
  7. Drizzle the dressing over salad.
  8. Serve chilled salad ( in the cored watermelon shell if desired ) topped with more feta cheese and mint.
