Watermelon Lime Rose Mocktail

My daughter and I recently came up with this recipe when she had taken part in a mocktail challenge at work. This is a super cool drink and we used freshly squeezed water melon juice, lime juice and sparkling soda. For the rose syrup, we used the Rooh Afza, which is easily available at most Southeast Asian groceries. Garnish it with some lime wedges and water melon triangles. Also make ahead some water melon ice cubes and you get this refreshing summer drink. Everyone just loved it and what's more it looks awesome too :) https://www.youtube.com/watch?v=l7nP25QU7g8
Servings: 1 yield(s)
Ingredients
    For Mocktail:
  • 1 cup watermelon juice (fresh)
  • 3/4 cup sparkling soda
  • 1/4 cup rose syrup (I used Rooh Afza)
  • 2 tbsp. lime juice (freshly squeezed)
  • 1/4 cup crushed ice (or watermelon ice cubes)
  • For Garnish:
  • 1 lime wedge
  • 11 small watermelon wedge (cut into a triangular shape)
  • a little rock salt and lime juice (for rimming the glass edge)
  • 1 small sprig fresh mint
Instructions
  1. Rim the edges of your serving glasses with some lime and rock salt.
  2. Pour one part water melon juice, 3/4 part sparkling soda, 1/4 part rose syrup, 2 tbsp. freshly squeezed lime juice into a shaker along with a little crushed ice. Close the lid and shake well.
  3. Pour the contents into the prepared glass/glasses.
  4. Garnish with lime and watermelon wedges and some fresh mint.
Recipe Notes

Variation: You can make this into a cocktail drink by adding in a shot of white rum like Bacardi Silver or vodka. Enjoy :)
