Spicy Vegan Chickpea Meatballs
Meatballs is made with some kind of ground meat like beef, veal, lamb or chicken. Here is a vegan meatball recipe made with ground chickpeas and couscous. It tastes really amazing served over some spaghetti.

Ingredients
For the Vegan Meatballs:

cup dried chickpeas

1
cup couscous
-
5
cloves of garlic

1
tsp. chilli powder

1
tbsp. soy sauce

1
tbsp. parsley
-
1
small red onion
For the Spicy Sauce

3
tbsp. hot sauce
-
2
tsp. honey
-
3
tbsp. Thai chilli sauce
-
1
tbsp. corn starch mixed mixed with 1/4 cup water

a little
parsley
(for garnish)
Instructions
For Vegan Meatballs

If using dried chickpeas, wash and soak them in clean water overnight.

Preheat oven to 400 degree F

Pour hot water over couscous in a bowl and cover it with a plate for about 10 minutes.

In a food processor, pulse cooked couscous, soaked chickpeas, some garlic cloves, salt, pepper, red chilli powder, soy sauce, parsley and a small red onion.

Roll the ground mixture into meatball sized balls and place them on a greased tray in the oven.

Place the vegan meatballs in the oven and cook for about 30 minutes, flipping them halfway through.
Spicy Sauce:

In a saucepan, add hot sauce, soy sauce, honey, Thai chilli sauce (can use spices of your own choice) and some cornstarch mixed with a little water. Bring the sauce to a simmer.

Add baked vegan meatballs into the saucepan and toss well until the meatballs are well coated with the spicy sauce. Garnish with some parsley.

Can serve this spicy vegan meatballs with rice or with some spaghetti and marinara sauce.
