Quinoa Tikki

Tikki is a type of mini cutlet made with potatoes and vegetables. A new twist on this popular recipe, these are made with Quinoa seeds as the main ingredient. Healthy, nutritious and refreshingly different!

Ingredients
  • 1 cup cooked quinoa
  • 3 medium potatoes (boiled and mashed)
  • 1 medium carrot (grated)
  • 1/4 cup grated paneer
  • 1/4 cup boiled green peas
  • 2 tbsp. spring onion (finely chopped)
  • 4 green chillies (finely chopped)
  • 1 tbsp. grated ginger
  • 1/4 cup coriander leaves/cilantro (finely chopped)
  • a little salt to taste
  • 1/4 tsp. cumin powder
  • 1/4 tsp. pepper pd.
  • 2 tbsp. corn flour
  • a little oil (to fry the tikki)
Instructions
  1. Wash a cup of quinoa thoroughly and cook in 2 cups of boiling water for about 10 minutes.
  2. In a large bowl, add cooked quinoa, mashed potatoes, paneer, carrot, green chilli, ginger, coriander leaves, seasonings and corn flour. Mix well.
  3. Grease your palms with some oil and roll out round shaped patties (tikkis) from the mix.
  4. Heat a little oil on a non stick frying pan or skillet. Place the tikkis on the pan a little apart and fry until they are browned on one side. Then, flip each patty with a spatula and cook on the other side for a few minutes.
  5. Take out cooked quinoa tikkis onto a platter and serve with mint and coriander chutney.
