Paneer Fried Rice

Ingredients
  • 6 cups cooked rice
  • 400 gms (cubed paneer pieces)
  • 2 or 3 Bell Peppers (red and green)
  • 2 celery stalks
  • 1 big carrot
  • 1 onion
  • 3/4 cup green peas (can use frozen )
  • 1 cup finely sliced cabbage
  • 2 tbsp garlic (finely chopped)
  • 2 tbsp ginger (finely chopped)
  • 3 tbsp soya sauce
  • 2 tbsp hot chilli sauce
  • 2 green chillies
  • 3 tbsp. white vinegar
  • 3 tbsp oil
  • 1 stick sprig of cilantro (for garnish)
Instructions
  1. Take vinegar in a small glass bowl and add finely chop green chillies to this and keep aside.Slice vegetables (bell peppers, carrot and celery) into cubes and finely chop onion and keep aside.
  2. Add a tsp of red chilli sauce and garlic paste to the paneer cubes and keep aside for 10 minutes.
  3. Heat a large wok or frying pan and add a tbsp of oil in it. Add the marinated paneer cubes and fry until the paneer is evenly browned on all sides. Remove the paneer cubes onto a plate and keep aside.
  4. In the same wok or frying pan, add 2 tbsp. oil and add in the finely chopped ginger and garlic. Then add in the chopped onion and saute this for about a minute.
  5. Next, add in the vegetables, first carrots, then celery and stir fry for a few minutes on high flame. Do not overcook the vegetables.
  6. Now add in sliced cabbage and mix well.
  7. Add the 3 tbsp.soya sauce, rest of the chilli sauce and the green chillies with vinegar.
  8. Add in the cooked rice and mix well. Finally add in the bell pepper cubes, fried paneer cubes and frozen peas and toss gently until everything is well combined. Do not overcook the vegetables. Check for seasonings and garnish with chopped cilantro or coriander leaves.
