Mint Flavoured Swirl Cookies
A hint of mint flavour and the green colour make these cookies look very festive. A must for the Holiday season.

Ingredients

cup unsalted butter

cup sugar

tbsp. vanilla extract

tsp. peppermint extract

cups flour

tsp. green food colouring
Instructions

Mix sugar and softened butter well until it becomes creamy, light and fluffy.

Add in the vanilla and peppermint extract and mix.

Sift flour with salt and add in batches on low speed until everything blends well.

Take out the cookie dough from the mixer bowl and divide the contents into equal halves.

Mix the green food colouring to one half, kneading it until the colour is well blended and form into a smooth ball.

Knead out the remaining dough into a ball without any colour.

Place both the balls onto plastic or wax paper and roll out each into a rectangle about 9 inch long and 6 inch wide.

Cut each of the rolled rectangles into half lengthwise. So you now have two plain rectangles and two green ones.

Now carefully place one plain rectangle on top of the green rectangle and press along edges and sides. Roll these lengthwise into a long tight roll and wrap it in wax or plastic wrap. Repeat with the other halves too.

Now place both these rolls in the refrigerator for at least three hours.

Before baking, preheat the oven to 350 degrees F. Line 2 cookie sheets with parchment.

Remove the wrap and cut out thick slices from the cookie rolls and place them on the cookie sheet a little apart. Bake these in the oven for 10 minutes. Cool and store them in air tight containers. Keeps well for about 2 weeks.
Recipe Notes
You can use red food colouring to the half the batch of cookies to make it more festive :)
