Mashed Sweet Potatoes
Sweet Potatoes are high is vitamin C, beta carotene and carbs. This is a variation from the classic dish using sweet instead of regular potatoes. Instead of cream/milk, I have used coconut milk in this recipe.

sweet potatoes

cloves garlic

salt and pepper to taste

cup coconut milk

tbsp. butter

tsp. garam masala
(optional)

fresh dill
(for garnish)
Instructions

Wash, peel and cut sweet potato into chunks. Boil water in a large pot. Add in the sweet potato, garlic cloves. Cook for about 15 to 20 minutes or until the sweet potatoes are fork tender.

Drain out the water and mash sweet potatoes with a masher or fork. Add in the coconut milk, garam masala (if using), salt and pepper to taste. Add in melted butter. Garnish with fresh dill and serve warm.
