Cranberry Chocolate Cookies

These cookies are flavourful and can be made ahead during Christmas. I call them the Triple C Cookies -Cranberries, chocolate and cardamom :)

Ingredients
  • 1 cup softened unsalted butter
  • 1 cup sugar
  • 2 & 1/2 cups all purpose flour
  • 1/2 cup dried cranberries
  • 1/4 cup chocolate chips
  • 1 egg
  • 1 & 1/2 tsp. ground cardamom
  • 1 tsp.lemon zest
  • 1/2 tsp. baking powder
Instructions
  1. Sift flour and baking powder.
  2. In a mixing bowl, mix sugar and butter until soft and fluffy, about 3 minutes.
  3. Beat in egg and lemon zest.
  4. Now slowly add in the flour mix.
  5. Finally add cranberries and chocolate chips and mix well.
  6. Divide the dough into 4 equal parts. Roll our each part into a log about 6 inches long and 2 inches wide. Wrap these logs into a plastic or wax paper and keep to chill in the refrigerator for at least 3 hours.
  7. Before baking, preheat oven to 375 degrees F. Line 2 large cookie sheets with parchment.
  8. Slice the logs into thick rounds and arrange them on the cookie sheet a little apart.
  9. Bake for 10 minutes, then cool on wire rack. Store in cookie jars and enjoy!
