Cranberry Chocolate Cookies
These cookies are flavourful and can be made ahead during Christmas. I call them the Triple C Cookies -Cranberries, chocolate and cardamom :)

Ingredients

cup softened unsalted butter

cup sugar

cups all purpose flour

cup dried cranberries

1/4
cup chocolate chips

egg

1 & 1/2
tsp. ground cardamom

tsp.lemon zest

tsp. baking powder
Instructions

Sift flour and baking powder.

In a mixing bowl, mix sugar and butter until soft and fluffy, about 3 minutes.

Beat in egg and lemon zest.

Now slowly add in the flour mix.

Finally add cranberries and chocolate chips and mix well.

Divide the dough into 4 equal parts. Roll our each part into a log about 6 inches long and 2 inches wide. Wrap these logs into a plastic or wax paper and keep to chill in the refrigerator for at least 3 hours.

Before baking, preheat oven to 375 degrees F. Line 2 large cookie sheets with parchment.

Slice the logs into thick rounds and arrange them on the cookie sheet a little apart.

Bake for 10 minutes, then cool on wire rack. Store in cookie jars and enjoy!
