Coconut curried Mahi-Mahi

Some of the simplest recipes to make are the most delicious ones and coconut curried fish is one such. It takes only about 30 minutes to make make this dish but serve it over white or brown rice & a salad and you have one healthy, wholesome weeknight meal!

Ingredients
  • 1 lb. mahi-mahi (fresh or frozen)
  • 1 cup coconut milk
  • 1 onion
  • 2 green chillies
  • 1 tbsp chopped ginger
  • 1 tsp chopped garlic
  • 4 kodumpulli (malabar or fish tamarind)
  • 2 tsp olive oil
  • 2 tbsp red chilli powder
  • 1 tbsp coriander powder
  • 1 tbsp turmeric
  • 1 tbsp salt (to taste)
  • 1 tsp fresh group pepper
  • 1 tsp cumin powder
  • 2 tsp lemon juice
  • 1 tbsp cilantro (for garnish)
Instructions
  1. Soak tamarind pieces in warm water. Thaw fish if frozen. Clean & cut them into medium sized cubes. Make a paste of salt, turmeric, ground pepper & lemon juice. Rub the paste all over the cubes Mahi-Mahi & keep aside for about 10 minutes.
  2. Heat oil in a large pan. Add chopped onions and fry until a little they turn a light brown. Add chopped green, chilies, ginger & garlic. Sauté for a few minutes.
  3. Now add the spices (red chilli, coriander, cumin & mustard pd.) and mix well.
  4. Add the coconut milk & let the curry come to a rapid boil. Lower heat & simmer for about 5 minutes.
  5. Now add in the fish pieces along with the tamarind to the curry. Cover the pan & cook on medium heat for 15 to 20 minutes. Check for seasonings & right before serving garnish with chopped cilantro.
