Baked Rotini And Veggies Casserole

Rotini in Italian stands for "small wheels". These twisty pasta hold the sauces well and is therefore a good choice for baked pasta dishes.

Ingredients
  • 300 g rotini pasta
  • 400 ml roasted garlic Alfredo sauce (store bought)
  • 1 small onion
  • 1 cup chopped spinach
  • 1 red bell pepper
  • 2 tbsp. mixed Italian seasoning (oregano, rosemary, basil, parseley, garlic)
  • 1/4 tsp.chilli flakes
  • 1/4 cup grated parmesan
Instructions
  1. Bring a large pot of water to boil and cook the tortellini for 6 minutes. Drain in a colander.
  2. Preheat oven to 350 degrees F.
  3. Take a 9" baking dish and pour the Alfredo sauce into it. Add the seasonings, finely chopped bell pepper, spinach and onion to this and mix well. Add the drained pasta and toss well. Top it with grated parmesan and red pepper flakes.
  4. Bake the casserole in the oven for 20 to 25 minutes. Enjoy!
