Vegetable Pakoras

Pakoras are a delicious snack from India made usually with gram flour (besan) or chickpea flour and vegetables. It can also be served as an appetizer. Any vegetables of your choice such as onions, potatoes, eggplant, fenugreek leaves, spinach, cauliflower or plantains. Sometimes cottage cheese (paneer), fish, chicken or eggs are used for making pakoras too. These are a favorite snack during the rains in India served with hot masala tea.

Ingredients
  • 1 large onion
  • 1 small potato
  • 1 medium green bell pepper
  • 1 bunch spinach leaves
  • 4 whole green chillies
  • 1 inch ginger
  • 1 lemon (juiced)
  • 1.5 cup chickpea flour
  • 2 tbsp water (if needed)
  • 2 tsp cumin seeds
  • Some salt (to taste)
  • Some oil (for frying)
Instructions
  1. Finely chop the spinach, onion, green chilies, bell pepper. Peel and grate the potato and ginger. Mix all the vegetables together. Add about a cup and a half of chickpea flour to this. Add salt to taste, cumin seeds and the lemon juice. Mix it together once again and add a little water to this to make it a paste like consistency. Meanwhile heat oil in a wok or kadhai. When the oil becomes hot, pour in spoonful of the batter into the oil. Fry on medium flame until they turn crispy and brown all over. Drain on paper towel. Serve warm with a condiment like chutney or plain ketchup and a cup of tea.
