Thai Chicken Bites

Thai Chicken Bites is a spicy, tangy appetizer recipe using chciken brest and Thai flavourings. The chicken pieces are deep fried and then tossed in the sauce.

Ingredients
  • lb. boneless, skinless chicken breast
  • 2 tbsp.corn starch
  • 2 tbsp. all purpose flour
  • enough oil for deep frying the chicken
  • 2 tbsp. green onions finely chopped
  • 2 tbsp. thai chilli sauce
  • 1 tsp. soya sauce
  • 1 tbsp. cilantro, chopped
  • 2 tbsp. Ramen noodles (optional)
Instructions
  1. Clean and cut chicken breast into bite sized pieces.
  2. Add corn starch, all purpose flour, a pich of salt and pepper to the chicken pieces and toss them well. Leave aside for 5 minutes.
  3. Heat oil in a wok and fry the chicken pieces in batches, a few at a time until the chicken is evenly browned on all sides and cooked well about 7 minutes for each batch.
  4. Remove the fried chicken on a paper lined tray and fry rest of the chicken pieces.
  5. Slice green onions, carrots into juliennes and green pepper into cubes. Add freshly chopped cilantro to the mix.
  6. Take fried chicken pieces in a bowl, add chopped vegetables, soya sauce and Thai chilli. Add salt and pepper to taste.
  7. Toss everything well and take it out onto a serving platter. Serve warm with crispy fried ramen noodles on top.
