Strawberry Phirni

Ingredients
    For Phirni:
  • 3/4 cup basmati rice
  • 3/4 cup sugar
  • 4 cups milk
  • 1 cup cream
  • 1 tsp. ground cardamom
  • For Strawberry Syrup:
  • 1 cup water
  • 1/2 cup sugar
  • 1 tsp.vanilla extract
Instructions
    To make the Phirni:
  1. Wash and soak rice in cold water for 2 hours. Then drain water and grind it to a coarse consistency like sooji or semolina.
  2. In a heavy bottom pan bring milk, ground rice and sugar to a boil and cook for about 20 minutes on simmer until rice cooks. Keep stirring in between so that the rice does not stick to the bottom of pan. Now add cream and cardamom powder and stir until phirni thickens. Let it cool.
  3. To make the Strawberry Syrup:
  4. In a medium saucepan, add 1 cup water, 1 cup diced strawberries and 1/2 cup sugar. Boil until the syrup thickens about 10 minutes. Then turn off flame and add the remaining 1 cup diced strawberries. Let it cool.
  5. To assemble the Phirni:
  6. In a dessert cup, spoon phirni and top it with strawberry syrup. Enjoy :)
