Spinach Soup

This is a creamy, delicious soup made with spinach.

Ingredients
  • 1 lb spinach leaves
  • 1 medium white potato
  • 1 onion
  • 4 cloves garlic
  • 1/2 tsp. cinnamon pd.
  • 1/4 tsp. ground nutmeg
  • 2 cups milk
  • a little salt and pepper powder
Instructions
  1. Wash spinach and chop leaves. Chop onion, garlic. Peel and cut potato into small cubes.
  2. Heat oil/butter in a large pan and saute the onion and garlic. After 2 or 3 minutes, add potatoes and cook for 5 minutes. Then add spinach, cinnamon, salt and pepper to taste. Saute for a couple of minutes.
  3. Adding about 1/2 cup of water, puree the mix in a blender, in batches if necessary.
  4. Pour out the contents into a saucepan, add in 2 cups of milk and bring it to a boil, stirring constantly. Add a little ground nutmeg, check seasonings and turn off heat. Serve spinach soup with some warm crusty bread.
