Sooji Halwa (Sheera)

Sooji Halwa is a sweet dish made with semolina, ghee, cardamom and sugar. This dish is often made during religious festivals in India and served as an offering in Hindu temples. Sometimes, fresh fruits like banana, apples or pineapples are added to enhance the flavour. Either milk or water is used to make this sweet. Instead of sugar, jaggery is also used for the recipe.

Ingredients
  • cup sooji or rawa (semolina)
  • 3 tbsp. ghee
  • 1/2 tsp. green cardamom seeds (ground)
  • 2 tbsp. flaked almonds (or cashew nuts)
  • 1 tbsp. raisins
  • pinch of saffron
  • 1 cup ground jaggery (or sugar/brown sugar)
  • 4 cups boiling water (or milk)
Instructions
  1. Heat ghee in a large pan and slightly roast the almonds/cashew nuts and raisins. Take it out with a slotted spoon and keep aside.
  2. Now add semolina into the same pan and roast on low heat, stirring constantly about 15 minutes. Make sure the semolina does not burn at the bottom, so stir continuously.
  3. Meanwhile keep milk/water for boiling.
  4. Now add jaggery/sugar to the semolina and keep frying for a few minutes. Add in the nuts, saffron strands, ground cardamom and raisins. Fry well for a couple of minutes.
  5. Keeping the setting of flame very low, add in the boiling milk/water to the mixture, stirring constantly until you get the halwa consistency. Serve garnished with more nuts and raisins.
