Shrimp with Green Mango Curry

Ingredients
  • 500 g shrimp (cleaned, deveined)
  • 3 tbsp grated coconut
  • 1 big green mango (chopped and seed removed)
  • 2 tbsp oil
  • 1 big onion (chopped)
  • 2 green chillies
  • 2 tsp ginger garlic paste
  • 5 black peppercorns
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 sprig curry leaves (optional)
  • 1 spring cilantro (to garnish)
  • 2 tsp lime juice
  • 1 tomato (chopped)
Instructions
  1. Make a fine paste with the onions, coconut, ginger, garlic, half of the green mango & all the spices with a little water.
  2. Heat oil in a pan, and add the ground paste into it. Add the curry leaves. Keep stirring constantly so that the paste do not stick to the bottom of the pan. Cover & cook for about 5 minutes, stirring the contents in between.
  3. Add about 1 cup of water to this paste & mix well. Let it cook for another couple of minutes.
  4. Then add the remaining mango pieces, chopped tomatoes & shrimp, cover and cook for about 10 to 12 minutes. Add the lime juice. Garnish with cilantro & serve with rice.
