Sev Tamatar (Chickpea Noodles In Tomato Gravy

Sev Tamatar, also called Sev Tametu is a vegetarian recipe from Western parts of India. It is popular in Gujarat and Rajasthan. While growing up in Gujarat, we used to call this dish the Gujarati version of American Chop suey. This dish does not require a lot of planning and can be made quickly. You can make the tomato gravy ahead of time and just add sev at the time of serving.

Ingredients
  • 500 gms. tomatoes
  • 1 cup sev (about 240 gms.)
  • 2 cups water
  • 1 green chilli
  • 1/2 tsp. ginger (chopped)
  • 1 tsp. chilli pd.
  • 1/2 tsp. turmeric
  • a little salt to taste
  • 1 tsp. asafoetida
  • 1 tsp. lemon juice
  • 1 tsp. sugar or jaggery
  • 2 tsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. cumin seeds
  • 1/2 bunch fresh cilantro (dhaniya)
Instructions
  1. Clean and chop tomatoes. Make a paste of ginger and green chili.
  2. Heat oil in a sauce pan and when the oil heats, add the mustard and cumin seeds. When the seeds splutter, add the green the ginger-green chilli paste.
  3. Now add the chopped tomatoes, salt to taste and let the tomatoes cook (cover the pan) for about 5 minutes.
  4. Next, add in the chilli pd., turmeric, asafoetida (hing), sugar/jaggery, garam masala. Add 2 cups water and let the sauce come to a boil. Now reduce heat and simmer for 10 minutes or until tomatoes are fully cooked.
  5. Add lemon juice and adjust seasonings if needed.
  6. Just before serving, add the sev and mix well. Turn off fire immediately.
  7. Garnish with chopped cilantro and serve with Indian flatbread like roti or chapati.
