Saffron Shrikhand

'Shrikhand' is a sweet dish made with yogurt. It is very popular in the states of Gujarat and Maharashtra. This dish often served for festivals, weddings and special occasions.  It goes very well with deep fried whole wheat bread called pooris. Ingredients
  • 2 cups thick yogurt (I used Greek Yogurt)
  • 1 tbsp. milk
  • 1/2 cup castor sugar ((powdered sugar))
  • 1/2 tsp. ground cardamon
  • 1/4 tsp. saffron strands
  • 2 tsp. pistachios ((coarsely ground))
Instructions
  1. Use yogurt as is if it is really thick. Or else hand the yogurt in a muslin cloth for a couple of hours to remove excess water.
  2. Soak saffron in cold milk for 20 minutes.
  3. Now fold in all the ingredients into the yogurt and garnish with coarsely ground pistachios.
  4. Chill completely in the refrigerator before serving. Serve with warm, fluffy poori/puri (fried Indian flat bread).
