Sabudana Khichdi

Sabudana khichdi is a dish often made during fasting days in many parts of Northern India especially Maharashtra & Gujarat. "Sabudana" is also known as tapioca pearls & is high source carbohydrates. It is an easy to digest food & according popular beliefs is known to have a cooling effect on the body.

Ingredients
  • cup sabudana (tapioca pearls)
  • 1 potato
  • 2 green chillies
  • 2 tbsp. oil (or ghee)
  • 1/4 cup peanuts
  • 1/2 lemon
  • 2 sprigs cilantro (coriander leaves)
  • 3/4 tsp. salt (or as needed)
  • 3/4 tsp. sugar (or as needed)
  • 1/4 tsp. turmeric (optional)
Instructions
  1. Wash 1 cup sabudana & soak in a little water (about 3/4 cup) for at least 4 hours or overnight. Boil potato. Peel & cut into small cubes. Finely chop green chillies & cilantro.
  2. Roast peanuts in a pan for a few minutes. Cool, remove skin if you want to & slightly crush them in a mortar & pestle.
  3. Heat ghee/oil in pan & add cumin seeds. Then add green chillies, turmeric and potatoes. Sauté for a couple of minutes, then add sugar & salt to taste.
  4. Add soaked sabudana & cook on medium heat for about 5 minutes. Finally add the roasted & crushed peanuts & lemon juice. Garnish with finely chopped cilantro. Enjoy!
