Pazham Pori Recipe ( Kerala Style Plantain Fritters )

Ingredients
  • 3 ripe plantains
  • 1 cup all purpose flour (maida)
  • 1/4 cup rice flour
  • a pinch salt to taste
  • a pinch tsp. turmeric pd.
  • 3 tbsp. sugar
  • 1/4 tsp. ground cardamom
  • 1 cup water (to make batter)
  • some oil for deep frying the fritters
Instructions
  1. Whisk together 1 cup all purpose flour, 1/4 rice flour, a little salt, a little turmeric, 1/4. tsp. ground cardamom and 3 tbsp. sugar in a big glass bowl. Add about 1 cup water to this, a little at a time to blend this into a smooth batter. leave this batter aside for about 20 minutes.
  2. Peel 3 plantains and cut each into 2 halves. Then slice each half into 3 long slices.
  3. Heat oil in a wok. Dip plantain pieces in the prepared batter and deep fry them in hot oil until evenly browned. Drain on kitchen napkins and serve pazham pori with tea or coffee.
