Oven Roasted Purple Cauliflower (A Healthy Recipe )

Here is an easy recipe made with purple cauliflowers. The purple cauliflower is packed with more nutrients and antioxidents than the regular white ones. It is an excellent source of vitamin C, fibre, potassium and B vitamins. When it bakes, the purple colour gets even more accentuated and the florets become crispy on the edges and soft inside. This is a beautiful side dish. It can also be had as a healthy snack.

Ingredients
  • 1 Purple Cauliflower (cut into florets)
  • 1 tsp. garlic pd.
  • 1 tsp. ginger pd.
  • 1/2 tsp. salt
  • 1 tsp.black pepper pd.
  • 2 tbsp. Balsamic Vinegar
  • 2 tbsp. olive oil
Instructions
  1. Wash and cut cauliflower into medium florets.
  2. Place this in a glass baking dish and add in rest of the ingredients. Toss florets gently.
  3. Preheat oven to 375 degree F.
  4. Place the baking dish in the oven and bake cauliflower for about 35 minutes, turning once half way through. Set oven to broil setting for a minute after 35 minutes. Remove from oven and serve warm.
