Oven Baked Chicken & Baby Potatoes In Mushroom Sauce

Here is a baked chicken recipe. It is an easy to make dish for a cold day with few ingredients from your pantry. Chicken and potatoes are a universal favourite too!

Ingredients
  • 10 chicken drumsticks
  • 20 new baby potatoes
  • 10 Cremini mushrooms
  • 6 to 8 garlic cloves
  • 10 to 15 black pepper corns
  • 2 tsp. Rosemary (fresh or dried)
  • 240 ml Cream of Chicken Soup (1 small can)
  • 1/2 tsp. coriander powder
  • 1/2 tsp. chilli powder
  • 1/2 tsp. garam masala
  • 2 tsp.oil
  • a little salt to taste
Instructions
  1. Crush the pepper corns, along with the garlic and rosemary. Add chicken soup, coriander, chilli and garam masala powders to this and mix well.
  2. Marinate chicken drumsticks in this paste for about 15 minutes.
  3. Preheat oven to 350 degrees F.
  4. Peel and slice the onions and cut the mushrooms into halves. Wash the baby potatoes (no need to peel).
  5. After 15 minutes, take a baking dish and arrange the marinated drumsticks along with the soup base. Now add in the potatoes, mushroom and sliced onions.
  6. Cover the baking dish with some aluminium foil and bake about 45 minutes. Then, remove foil and bake another 15 5o 20 minutes, uncovered till the top looks golden brown and the potatoes get a rustic look.
  7. Serve with some warm garlic bread.

Garam Masala is a traditional mix of spices used in South East Asian cooking. The basic ingredients are cloves, cinnamon, star anise, cardamom and nutmeg. Depending on various regions, some cooks in India add bay leaves, cumin seeds, coriander seeds, black pepper, ginger powder and fenugreek seeds too for making garam masala.
