Nadan Mutta Curry (Egg Curry In Coconut Milk)

  Nadan Mutta Curry is an easy and tasty egg curry from the state of Kerala. Nadan means native and mutta stands for eggs in Malayalam language. So as the name suggests this egg curry is made in traditional Kerala style using local spics and coconut milk.

Ingredients
  • 8 large eggs
  • 1 big onion
  • 2 big potatoes
  • 2 tomatoes
  • 5 green chillies
  • 1 inch ginger
  • 1 tsp. salt
  • 1/2 tsp. turmeric
  • 1 tbsp. coriander powder
  • 1 tsp. garam masala
  • 2 tbsp. oil (prefer virgin coconut oil)
  • 250 ml. coconut milk
  • 2 cups water
  • 2 tbsp. chopped cilantro (for garnish)
Instructions
  1. Hard boil eggs for about 10 minutes. Shell and keep aside.
  2. Slice the onion lengthwise. Peel and cut potatoes into big cubes. Chop tomatoes into big pieces. Slit green chillies lengthwise and chop ginger into juliennes.
  3. Heat oil in a wok or large pan. Add chopped onions, ginger and green chillies. Saute for 4 to 5 minutes on medium heat until onions are translucent and semi cooked.
  4. Add potato cubes saute another 2 minutes. Add salt, coriander powder, turmeric, garam masala and mix well.
  5. Now add in chopped tomatoes and saute for 3 minutes.Mix well and add 2 cups of water. Coving the pan with a lid, cook for 5 minutes.
  6. Next, remove the lid, add the coconut milk and let the curry simmer on low to medium heat until potatoes are fully cooked.
  7. Now add in the boiled eggs, cut lengthwise and simmer for a few more minutes.
  8. Finally garnish the curry with chopped cilantro. Tastes good with appams, chapatis, bread and roti.
