Mutton Malvani

Malvan is a coastal region in Konkan as as the name suggests Malvani cuisine is from this region. Malvani food is popular in India. As it is a coastal region, most the dishes have coconut.

Ingredients
  • kg mutton
  • 3 large onions
  • 2 tbsp. ginger-garlic paste
  • 1 tsp. green chilli paste
  • 1 tsp. turmeric
  • 2 tbsp. oil
  • a little salt to taste
  • 1 sprig coriander leaves
  • 2 tsp. tamarind paste (or juice of 1 lemon)
  • Malvani Masala (Spice Blend)
  • 2 tsp. coriander seeds
  • 1 tsp. cumin seeds
  • 1 tsp. fennel seeds (saunf)
  • 6 pepper corns
  • 2 tsp. poppy seeds
  • 1/2 tsp. caraway seeds (shahjeera)
  • 1 tsp. mace (javantri)
  • 1 star anise (chakr phool)
  • 1 bay leaf
  • 1 small cinnamon stick
  • 1/2 cup desiccated coconut
Instructions
  1. Dry roast all the ingredients for the Malvani Masala in a frying pan until it emits a lovely aroma. Let it cool and the grind it all into a fine paste using little water as necessary.
  2. Wash and clean mutton and cut into medium cubes.
  3. Chop onions. Heat oil in a pan and fry onions until golden brown.
  4. Now add the mutton pieces, ginger - garlic paste, chilli paste, salt and turmeric into the pan. Fry the mutton pieces for 10 minutes.
  5. Now add in the ground Malvani spices, mix well and add in about 2 cups of water. Then add in the tamarind paste/lemon juice. Cover the pan and cook about 30 to 40 minutes on low flame. Stir it well in between and check for seasonings.
  6. Add fresh chopped coriander leaves for garnish and serve hot.
