Mutta Choru (Kerala Egg Fried Rice)

"Mutta Choru" (literally meaning egg rice in Malayalam) is a simple, tasty recipe. Often cooked with leftover rice, it is very different from the other Asian recipes. It is a easy recipe to follow and can be enjoyed with some pickle, yogurt and pappadoms on the side.

Ingredients
  • 2 cups cooked rice
  • 1 big onion
  • 5 green chillies
  • 2 tomatoes
  • 1 inch ginger
  • 2 sprigs cilantro
  • 8 eggs
  • a little salt and pepper to taste
  • 1/2 tsp. turmeric
  • 1/2 tsp. coriander powder
  • 2 tbsp. oil
Instructions
  1. Finely chop green chillies, onion, tomatoes and ginger and keep aside.
  2. Crack eggs into a bowl, add salt and pepper to taste. Beat well and keep aside.
  3. Heat oil in a wok or frying pan. Fry the onions, green chillies and ginger for 3 minutes. Now add some turmeric, coriander powder, mix well and then add chopped tomatoes. Cook for a 3 to 4 minutes, stirring well.
  4. Now add in the beaten eggs and cook until the eggs scramble. Then add in the cooked rice and mix well. Fry the rice until it nicely coats the egg mixture. Serve egg fired rice with hot some pickle, raita and pappadoms.
