Mung Bean Sprout Chilla

cup mung sprouts

1
cup chopped spinach

1/2
cup besan
(chickpea flour)

green chillies

1
tsp. grated ginger

tsp. roasted cumin seeds

a little
water for making the batter
(about 1/4 cup)

oil for shallow frying

pinch of
salt to taste

pinch of
black pepper pd.

Instructions

Grind mung sprouts, chopped green chillies, chopped ginger and salt to a smooth paste adding in just enough water to make a pancake like consistency.

Take out the contents into a large bowl and add in about 1/2 cup of besan to it. With the help of a whisk, mix everything well.

Add in the roasted cumin, ground pepper pd. and finely chopped spinach leaves. Add in a little more water if necessary. Let the batter rest for about 10 to 15 minutes.

Heat a griddle or a nonstick skillet and pour about 1/2 cup of the batter onto the pan in circular shape like making a dosa.

Cook about a minute or two, until the edges of the chilla start to leave the pan.

Drizzle some oil on the the sides with the help of a brush.

Now flip the chilla and cook on the other side until it is golden brown and done about 2 minutes.
