Lehsuni Baingan (Garlic Eggplant)
This is a spicy dish from Gujarat, made with eggplants or brinjals.
Ingredients

cups diced eggplants
(about 3 long eggplants)

tomatoes

head of garlic
(about 8 to 10 cloves)

tsp. chilli pd.

tsp. turmeric

a little
salt to taste

tsp. asafoetida

1/2
cup water

tbsp. oil
Instructions

Wash and dice eggplants and keep aside.

Heat oil in a pan and add minced garlic, saute for a minute, then add in the eggplants. Saute for 3 to 4 minutes.

Add salt, lower the flame and cook about 5 minutes, covering pan with a lid.

Remove lid, add tomatoes and rest of the spices and diced tomatoes

Add in a little water (1/2 cu) as necessary and cook, covered until eggplant is fully cooked. Should take about 8 to 10 minutes. This is a dry dish.

This dish goes well with khichdi or rotis.
