Lehsuni Baingan (Garlic Eggplant)

This is a spicy  dish from Gujarat, made with eggplants or brinjals.
Ingredients
  • 2 cups diced eggplants (about 3 long eggplants)
  • 2 tomatoes
  • 1 head of garlic (about 8 to 10 cloves)
  • 2 tsp. chilli pd.
  • 1/2 tsp. turmeric
  • a little salt to taste
  • 1/4 tsp. asafoetida
  • 1/2 cup water
  • 3 tbsp. oil
Instructions
  1. Wash and dice eggplants and keep aside.
  2. Heat oil in a pan and add minced garlic, saute for a minute, then add in the eggplants. Saute for 3 to 4 minutes.
  3. Add salt, lower the flame and cook about 5 minutes, covering pan with a lid.
  4. Remove lid, add tomatoes and rest of the spices and diced tomatoes
  5. Add in a little water (1/2 cu) as necessary and cook, covered until eggplant is fully cooked. Should take about 8 to 10 minutes. This is a dry dish.
  6. This dish goes well with khichdi or rotis.
