Kerala Chicken Stew
Here is a Chicken Stew recipe from my home state of Kerala. This delicious stew is often served with Kerala style pal appams.

Ingredients

whole chicken, skin removed and cut into medium sized pieces

large onions, chopped

large potatoes, cut into cut into big pieces

carrots, cut in big pieces

2
cups coconut milk

tbsp. fresh ginger, ground

tbsp. ground garlic
-

green chillies, sliced long

3
sprigs curry leaves
-

bay leaf
-
1/2
tsp. cloves
-
1
tsp. cinnamon
-
1/2
tsp. cardamom
-
1
tsp. fennel seeds
-
1/2
tsp. black pepper corns

tbsp. coriander pd.

tbsp. turmeric pd.

lemon

a little
salt to taste
Instructions

Marinate chicken pieces in slat, turmeric, lemon juice and 2 tbsp. each of the ginger and garlic paste. Keep in refrigerator for about 2 hours.

Heat oil in a pan and add half of the whole spices along withe the chopped onions and green chillies. Let this cook until the onions are translucent about 10 minutes.

Now add the ginger and garlic paste along with the marinated chicken and sauce for about 10 minutes.

Make a paste out of the rest of the whole spices.

Add this paste to the chicken and add the coconut milk. Let this cook covered for about 30 minutes on medium flame.

Now add the carrot and potatoes and let this cook about 7 minutes until the vegetables are cooked.

Check for seasonings and garnish with sautéed curry leaves. Serve with Kerala pal appams or rice.
