Instant Pot Mutton Curry
This is a meat recipe made in the instant pot. Mutton cooked in a rich gravy of onions. tomatoes and spices.

Ingredients

lbs. mutton
(bone in pieces)

medium onions

1
inch fresh ginger

tbsp. ghee/oil

For curry paste

whole garlic
(about 8 to 10 cloves)

tomatoes

cloves

2
small cinnamon sticks

green cardamom

black cardamom

tbsp. fennel seeds and peppercorns

tbsp. coriander pd.

tsp. red chilli pd.

tsp. turmeric
Instructions

Wash mutton pieces, rub a little salt and turmeric and keep aside.

Peel and chop onions into thin slices. Finely chop ginger.

In a medium skillet, dry roast all the whole spices for 2 minutes on medium flame. Stir continuously. Then add in the garlic, coriander pd, chilli pd and turmeric and mix well. Let the spices cool for a few minutes. Then grind the spices along with the tomatoes into a smooth paste, adding only about 1/4 cup water.

Set the Instant Pot on Saute mode for 20 minutes. Add ghee/oil. Then add in the chopped onions and ginger. Saute for a minutes until onions turn brown. Now add in the mutton pieces. Saute well.

Now add in the spice paste and stir well. Add a little water only if necessary as mutton releases water while cooking. Cancel Saute mode and close the lid. Set the Instant Pot on Pressure Cook mode for 20 minutes.

When the Instant Pot beeps, press Cancel and let the pressure release naturally. Then open the lid and check seasonings. If there is more water and you want a thick gravy, set it on saute mode again for a few minutes until water evaporates. Garnish mutton curry with fresh chopped cilantro.
