Hariyali Chicken

Chicken Breast are the healthiest part of a chicken as it is lean meat and low on fat. But sometimes, people find it boring as it has a very bland flavour. But here is an Indian recipe which will spice up your tastebuds :) It is a easy to make recipe and what's more, the green colour of this appetizer makes it look appealing too. It only requires a couple of hours of marination and is excellent for your summer bbq too.

Ingredients
  • 4 boneless, skinless chicken breast
  • 1/2 cup oil
  • a little chaat masala
  • Marination paste:
  • 1 small bunch cilantro (including stems)
  • 1 bunch mint leaves
  • 1 tbsp. coriander pd.
  • 1 tsp. cumin pd.
  • 2 tbsp. black pepper pd.
  • 2 green chillies
  • 2 tbsp. ginger garlic paste
  • 2 lime (or lemon)
Instructions
  1. Grind chopped cilantro, mint, ginger-garlic paste, pepper pd., turmeric, chopped green chillies, coriander pd. and cumin pd. into a fine paste.
  2. Wash, clean and cut chicken into 2 inch cubes.
  3. Rub the marinade over the chicken pieces along with half the lime juice. Keep refrigerated for 2 hours at least.
  4. Grilling:
  5. If using wooden skewers, soak them in sufficient water 30 minutes prior to grilling. Take chicken out of the fridge 10 minutes prior to grilling, add 1/4 cup oil to the marinade and mix well.
  6. Preheat your bbq grill to medium high.
  7. Insert chicken cubes onto metal or wooden skewers, a little apart.
  8. Barbeque chicken about 4 and 1/2 minutes, closing the lid.
  9. After about 4 and 1/2 minutes, turn over and cook again for 5 minutes or so.
  10. Serve hot with onion and lemon wedges. You may also sprinkle a little chaat masala on to of the chicken.
