Gardener’s Pie With Black Beans And Soy Chunks
Gardener's pie is the vegetarian version of the Shepherd's pie.

Ingredients

cups soy chunks

2
medium onions

large carrot

cup green beans

stalks of celery

kg. sweet potatoes

kg. russet potatoes

cups black beans
(or any canned beans of choice)

can of crushed tomatoes

cups cheddar cheese

cup vegetable broth

cup white wine

cup milk

tbsp. olive oil

tbsp. butter

tsp. cumin powder

tsp. oregano

a little
salt and pepper to taste
Instructions

Soak soy chunks in hot water for 30 minutes and then pressure cook until soft, about 3 whistles. Drain and lightly mash the sou chunks with a fork.

Heat oil in a pan and fry chopped garlic, onion, celery, carrots and green beans for about 3 minutes.

Now stir in the black beans, soy chunks along with cumin powder, salt and pepper to taste.

Add in the crushed tomatoes, white wine and vegetable broth. Mix well and add fresh oregano. Cover the pan and cook on medium het fro 15 minutes.

Peel russet and sweet potatoes and cut them into medium cubes. Boil water in a big pan and cook potatoes in it for about 20 minutes until they are fork tender.

Drain off the water from potatoes and place them in the same pan. Mash potatoes, then add milk, butter and a little salt and pepper to taste. Mix in 1/2 cup of the cheese to the mashed potatoes.

Preheat oven to 375 degree F

Taking a large baking dish (about 13*9) and put the vegetable mix in the pan. Top it with the mashed potatoes. Top the pie with the remaining cheese and bake for about 30 minutes.
