Edamame Salad

Ingredients
  • 2 cups Frozen Edamame Beans
  • 1/2 red onion (chopped fine)
  • 1 medium tomato (deseeded and cut finely)
  • 1/2 bell pepper
  • 2 tsp. extra virgin olive oil
  • lime
  • 1/2 tsp. black pepper (crushed)
  • 1 tsp. sesame seeds (toasted)
  • 1 tsp. grated ginger
  • 2 tsp. honey
  • some salt to taste
Instructions
  1. Bring some water to a boil, add salt to taste and the edamame and cook it for about 10 minutes until the beans are tender but not overcooked. Transfer it to a pot of ice water immediately.
  2. Drain the beans and add finely chopped onion, bell pepper and tomato.
  3. Make a salad dressing with EVOO, lime juice, pepper pd., ginger, honey and salt.
  4. Pour the dressing over the salad. Sprinkle toasted sesame seeds on top. Serve it either cold or at room temperature.
