Dalia (Broken Wheat) Upma

Dalia is made from broken wheat and is very popular in India as a healthy food. Dalia is low in cholesterol and fat, and is a good source of carbs, iron and fiber. It is considered especially beneficial for diabetics. Here is a very easy to make dalia recipe for breakfast. You could also make this as a light meal or snack, served with some yogurt & pickle.

Ingredients
  • cup dalia (broken wheat)
  • 1 carrot
  • small onion
  • 1 potato
  • 1 tomato
  • 2 green chillies
  • 1 tbsp chopped ginger
  • 1 sprig curry leaves
  • 1/4 tsp. mustard seeds
  • 1/4 tsp. red chilli pd.
  • 1/2 tsp. coriander pd.
  • 2 tbsp. cooking oil (or ghee)
  • 2 and 1/2 cups boiling water
  • some salt to taste
  • some cilantro to garnish (coriander leaves)
Instructions
  1. Wash & soak dalia in some warm water for about 10 minutes.
  2. Peel & cut potato & the carrot into small cubes. Chop onion fine. Chop green chillies & ginger into fine pieces.
  3. Heat oil in a pan & then add mustard seeds. When the seeds start to splutter, add in the onion,green chillies &?curry leaves, followed by the potatoes & carrot. Mix well & after a few minutes, add in the spices & tomato.
  4. Meanwhile boil about two & a half cups of water.
  5. Drain the soaked dalia & add it into the pan. Sauté for a few minutes. It is important that you add hot water to the dalia for it to cook properly.
  6. Once, the dalia starts cooking, lower the flame & cook covered about 10 to 12 minutes until the dalia is fully cooked. Serve warm, garnished with coriander leaves & a little lemon juice if desired.
Recipe Notes

You can cook the dalia upma in a pressure cooker too. Saute the vegetables and soaked dalia and after adding hot water, lower the flame and  pressure cook for  3 whistles.
