Dal Fry Tadka
"Dal" is a popular lentil dish from the Indian sub - continent. An Indian meal is not complete without a dal dish of some kind. Here is a popular dal recipe.

Ingredients

cup Arhar dal
(Tuvar dal)

medium onion

medium tomato

green chillies

tsp. ginger garlic paste

tsp. red chilli pd.

tsp. turmeric

tsp. mustard seeds

1/2
tsp. cumin seeds

tbsp. ghee

1/2
tsp. dried fenugreek leaves
(optional)

sprig of coriander leaves
(for garnish)
Instructions

Wash dal and rinse about 3 times until water runs clear. Soak dal in fresh water for 20 minutes.
Then drain and put the dal in a pressure with 2 cups of water. Pressure cook on medium heat for 3 whistles.

When the pressure goes down, open the lid, and mash the dal well with the back of a large spoon.

Add 3 tbsp.ghee in a deep bottom vessel and put it on medium heat.
Add mustard and cumin seeds.

When the seeds start spluttering, add the finely chopped onions. Fry on medium high until the onions turn a light brown.

Now add in chopped green chillies and ginger garlic paste. Fry for a minute.

Next, add the ground turmeric, red chilli pd. and salt to taste. Then add in finely chopped tomatoes. Mix well, cover the sessel and let tomatoes cook about 3 minutes.

Mash the paste well, and add in the cooked dal. Mix well.
Now add in 1/2 tsp. dried fenugreek leaves (optional).

Stir the dal mix well and let it cook further for 5 minutes until all the spices re blended in.

Serve dal fry garnished with chopped coriander leaves.
