Coconut Cranberry Laddu (Ladoo)
Laddu is a type of sweet dish. Laddu or sometimes spelt ladoo is round in shape. Coconut laddus are a popular type of laddu. Here I have added cranberries to the recipe to make it a festive treat for Christmas time.
Ingredients
-
3
cups unsweetened desiccated coconut
-
1/3
cup dried cranberries
-
1
can evaporated milk
(about 370 ml.)
-
1/2
tsp. ground cardamom
-
1/3
cup sugar
-
a pinch
of saffron
(optional)
Instructions
-
Keep aside 2 tbsp.of desiccated coconut for garnish later.
-
Finely chop cranberries in a food processor.
-
Combine evaporated milk with saffron strands and sugar in a medium saucepan. Stir on low heat for about 6 to 7 minutes.
-
Now add in the chopped cranberries, coconut and ground cardamom. Cook, stirring well about a minute or so until everything blends together but is not completely dried. Cool for 2 minutes. You need to work on making laddus while the mixture is still warm.
-
Take a small measure (about a tbsp.) of the mixture and make round balls (laddus). Roll each laddu in the preserved coconut powder. Store in an airtight container.
