Coconut Cranberry Laddu (Ladoo)

Laddu is a type of sweet dish. Laddu or sometimes spelt ladoo is round in shape. Coconut laddus are a popular type of laddu. Here I have added cranberries to the recipe to make it a festive treat for Christmas time.

Ingredients
  • 3 cups unsweetened desiccated coconut
  • 1/3 cup dried cranberries
  • 1 can evaporated milk (about 370 ml.)
  • 1/2 tsp. ground cardamom
  • 1/3 cup sugar
  • a pinch of saffron (optional)
Instructions
  1. Keep aside 2 tbsp.of desiccated coconut for garnish later.
  2. Finely chop cranberries in a food processor.
  3. Combine evaporated milk with saffron strands and sugar in a medium saucepan. Stir on low heat for about 6 to 7 minutes.
  4. Now add in the chopped cranberries, coconut and ground cardamom. Cook, stirring well about a minute or so until everything blends together but is not completely dried. Cool for 2 minutes. You need to work on making laddus while the mixture is still warm.
  5. Take a small measure (about a tbsp.) of the mixture and make round balls (laddus). Roll each laddu in the preserved coconut powder. Store in an airtight container.
