Cabbage Thoran (Stir Fried Cabbage With Coconut)

Ingredients
  • 1 medium cabbage
  • small onion
  • 2 cloves garlic
  • 2 whole green chillies
  • 1 tsp. mustard seeds
  • 2 tbsp. coconut oil
  • a little salt to taste
  • 2 tbsp. fresh or frozen grated coconut (can use dry grated coconut too)
  • 3 sprigs fresh curry leaves
Instructions
  1. Cut cabbage very fine. If using a food processor, chop the cabbage into big chunks and pulse them in batches. Do not use the grind option or you will end up getting cabbage paste. This is the most important step for this recipe. Finely chop green chillies and the onion too.
  2. Take oil in a wok or non stick pan. When oil is hot, add mustard seeds. When the seeds start spluttering, add in the whole red chilli if desired and then add curry leaves, finely chopped cabbage, onion and green chillies. Saute this for 3 to 4 minutes. Now add salt to taste, turmeric and grated coconut and mix well. Cover the wok/pan and cook about 3 to 4 minutes on low flame. Uncover, mix well and serve. This is a very delicate recipe, so take care not to burn or over cook the cabbage.
